A little Sunshine in every Jar.
We keep apiaries around Rosslare where our bees forage all summer in the sunny southeast of Ireland. They gather nectar from wildflowers and fields, bring it to the hives, and refine it into honey. We harvest the surplus from the frames twice a year, extract and filter the honey, let it settle for two days, then jar it—nothing is removed—creating a distinctive honey.

Jim Aherne, Retired Chef and Beekeeper
Multi‑award winning former Executive Head Chef of Kelly’s Resort Hotel, Rosslare. For over 35 years he displayed a deep passion for food, creating exciting dishes from ingredients he sourced primarily locally. His commitment to provenance and flavour led him to explore the finer details of local produce — and his honey soon gained a reputation for taste, quality and wholesome goodness.
A qualified beekeeper, Jim brings the same discipline and palate to beekeeping that he did to the kitchen. He champions the flora and flavours of Wexford through careful hive management and mindful harvesting, producing honey that captures the essence of the county’s meadows, hedgerows and coastal blooms. By selling this honey, Jim not only shares a pure, delicious product but also promotes the variety of foods and flavours available in Wexford — supporting local growers, celebrating seasonal ingredients and connecting people to the landscape that inspires his cooking.
Sean Aherne
Head Chef and Beekeeper
As a third-generation chef with over 30 years’ experience, Sean followed family tradition into beekeeping, assisting his father and later qualifying as a professional beekeeper. Papa Jim’s has become a true family business: alongside his brother Thomas, Sean’s wife Sandra and their children all pitch in to help during the busy harvest seasons. Sean is widely known for his integrity, quiet commitment, and steadfast dedication to producing fine, unblended honey.
